Raw. Vegan. Gluten free. Low fat

ok, so there is one there is one thing that I really hate to do- wasting food!  After a juicing frenzy yesterday, i was left with all of this pulp.  Hesitant to throw it out, i came up with this recipe to make the most of all of the fruit and veggies I used :)  
What you will need:
- 2 C juicing pulp (I juiced, carrots, beetroots, apple, ginger and celery)
- 1 C medjool dates
- 1/3 C dried coconut
- 1 T lacuma powder (optional)
- 1/4 C orange juice or water or fruit juice of choice
- 1 t cinnamon
- 1/3 C chopped dried apricots, goji berries and saltanas/dried fruit of choice
- Dried coconut to roll balls in
What to do:
- Throw everything except the last two ingredients into a food processor until well combined
- Hand mix in the dried fruit
- Roll mixture into bite-sized balls and roll in coconut
